Wolfe & Kensington / Ice care
Great ice.
A better cocktail.
Before you pour, let your ice temper.
Give your ice a few minutes out of the freezer before adding your drink. This simple step helps reveal its clarity and reduces the chance of cracking.
How to temper your ice ↓
minutes*
That’s your cue to pour. *Timing is a guide—larger pieces and colder freezers may need longer.
The most important step
From freezer to glass.
No special equipment. Just a little patience before the first pour.
Take out what you need.
Remove the pieces you’re about to serve and leave the rest sealed in the freezer. Place your ice in a clean glass or on a clean, food-safe tray.
Let it temper.
Leave it at room temperature for approximately 3–5 minutes. Larger pieces and ice from colder freezers may need longer.
Look at the ice, not just the clock: the frosty coating should disappear, leaving a clear, glossy surface that looks slightly wet. If it still looks frosty, give it a little more time.
Pour and enjoy.
Drain any meltwater, gently place the ice in your glass if needed, and slowly pour in your drink. A chilled cocktail helps reduce the temperature difference further.
Your ready-to-pour cue
Frost-free, glossy, and slightly wet.
Still frosty? Give it a little more time before adding your drink.
A little patience makes a difference
Why tempering matters.
Ice straight from the freezer can be much colder than the liquid poured over it. That sudden temperature change can cause internal cracks.
Tempering lets the ice warm gradually before it meets your drink, helping preserve its appearance.
It reduces the likelihood of cracking, although an occasional crack can still happen.
The finishing touch
Make the most of every piece.
Cubes & spheres
Pair with an Old Fashioned, Negroni, or your favorite spirit served over ice. Choose a glass that comfortably fits the piece.
Spears
Use in tall glasses for highballs and other long drinks.
Engraved ice
Position the design so it’s visible, and pour gently beside it to keep the presentation looking its best.
For cocktails that call for shaking or stirring, prepare the drink with separate mixing ice, then strain it over your tempered Wolfe & Kensington ice.
